I had not made a risotto for a long time. I don´t know why, some times you cook too much of something and forget other dishes.
I made a seafood risotto and I found some mussels broth in my freezer. It was the perfect addition to it. It had veggies (tender peas, bunch onions, green and yellow sweet pepper) and a bit of diced carrots. I had frozen seafood so I did no make it with canned seafood which is never as good.
There is something left if Dixie shows up tomorrow. I don´t know. And I still have artichokes for starters. The empanadas did not last until tomorrow though.

And then, when serving, you add some olive oil and a bit of grated Parmesan cheese.

The good thing about frozen seafood is that there´s a mix that you cannot get fresh. But I was thinking that for the next time, I´ll buy a kilo of mussels and I´ll have the water in which they are boiled.

We do not have asparagus now. That is, there are some, but very expensive.

@marguicha I think that those sold here now come from Spain, they are about $4 for 1 Kg.
