It's Spaghetti Tuesday!!

Good Tuesday morning mylotters. I hope everyone had a good night's sleep. I did for the first time in a few weeks. But, that is me. I have always had trouble sleeping.
My two guys love spaghetti and I make it once a week. The last time, I talked about making it someone, I cannot remember who asked me how I made my sauce.
First, I take the hamburger and cook it with all the spices. I add sausage, pork, and tomatoes; plus water and I let that cook for about three hours. I add tomato paste two small cans and Ragu and let that cook for another two
hours. Once in a while I will add some leftover chopped steak.
How do you make your sauce or is it a family secret? What's on your plate for this Tuesday?

We never make spaghetti with meat, I have many different recipes for spaghetti (I am Italian), I love them with shellfish, or also simply spaghetti with clams, or the classic "Carbonara", this is good, but pretty rich (eggs, bacon bites, Pecorino Romano cheese).

@whiteream We prepare the meat sauce to season "tagliatelle" (noodles) and other kind of "eggs pasta", never spaghetti, shrimps and butter is another thing we never mix, shrimps go with olive oil, almost never fish with butter. May be your Italian grandmother migrated to the United States when she was still young. I lived in Italy until I was 25 and then I went to see my family every month even if I lived in another country.

Wow, Anna, I actually learned how to cook my sauce from an Italian grandmother. I love all the different ways you have for making spaghetti. I love it with shrimp and butter, best.

@LadyDuck I have no idea if she was from Italy or lived here all her live. She was my high school friend's grandmother and she taught me some of her family recipes which I thought was amazing as they were only for family and she thought of me as such.

@whiteream I have been avoiding starchy foods while trying to lose weight. So not any spaghetti here right now. I do often make meatballs with it when we do have it.

@whiteream yes, that is true. My daughter loves white or cheese sauce. my husband likes tomato sauce, I like a mixture of both

Many people love spaghetti. It would be a pain if I made what each one of us like every time I make it. I change it all the time because we each like it differently. My son is easy he would just eat it with Ragu on it.

It depends if I am using fresh or tinned tomatoes. We usually cook it for quite a while and sometimes even the day before which seems to enhance the flavour. I add garlic, salt, black pepper some oregano and basil. It depends what dish we are making sometimes we make it slightly different and add Thyme instead and possibly some chillis.

I usually use fresh tomatoes. I made it with chillis a few times, it did not get great reviews. We all like it a little different so there are times when I do it differently. But, this is the basic.
