Homemade chili was what was on the menu last night thanks to @JohnRoberts. John suggested that I use the leftover Chinese fried rice in some chili and that sounded like a winning suggestion. Plus it was easy to make.
We just topped the fried rice off with chili. It was good and everyone enjoyed it. There was just enough left for hubby to take a bowl of chili (minus the rice) to work for lunch today.
Many thanks to all who gave suggestions. There were several others that I would like to try. But, I don't want another huge order from the Chinese place to put the recipe in action.
This meal finished off the Chinese leftovers thank goodness. I think we will be set to avoid the Chinese place for a few weeks now. <insert big laugh here>
What did you have for dinner last night? Do you like to turn your leftovers into a new meal or just toss them?

@crazyhorseladycx I don't like hovering in the kitchen either. My territory...stay out.; unless you want to do the dishes. Ha.

Good that you found a great suggestion here and it worked. I often turn leftovers into interesting meals.

We never toss leftovers. We always eat them one way or another. I had a bowl of lentil soup yesterday and one today.
