Burritos for dinner and breakfast

I had two ideas for dinner. Part of me was leaning towards hamburgers, but I had bought tortillas so I could make burritos. My daughter chose burritos. They're so easy to make and ready in under 30 minutes.
I browned a pound of ground beef and added a can of refried beans, a half cup of cheddar and between a half and a full cup of mild salsa. I stirred it until it was thoroughly blended and bubbling. Never put too much salsa in. Start with a little and stop when the thickness is what you like.
Meanwhile, heat up the tortillas. I leave mine in the package and heat for about 60 seconds in the microwave. You could also hear the tortillas separately over a gas burner or on a hot griddle. Just don't do any method for too long or put single tortillas in the microwave. Trust me on that.
We then put the hot filling in the center of the warmed tortilla. You can also add chopped lettuce and tomatoes along with more salsa and cheese.
Because I buy fajita sized tortillas, we can't fold on four sides, but three sides folded over the filling works fine for us. Just eat from the open end or you'll wear more than you eat!
One bonus is that you can use this same mixture as a hot dip for tortilla chips. Be sure to keep it in a warming dish or a small slow cooker. It's a great appetizer!
