I was in Publix today picking up some prescriptions I forgot about...and it led me to wonder what I wanted to cook for dinner.
I have been trying hard to come up with new ideas, or dishes that I haven't had in a good long time. It gets boring eating the same ole, same ole.
While I was strolling down the isles... It hit me that I have not had pinto beans and ham hock since I was a kid. I remember my grannies used to make them all the time, and so did my mom. I used to could not wait until they were done. I loved them that much.
Hard to believe that I never thought about making them until almost 50 years later. Where does the time go? LOL
The cooking process however, can be quite cumbersome if you want the flavor combinations to shine through...
However... Since I have not had them in a long while, I forgot that the beans needed to be soaked. I did some research, and if your stomach can handle it, they say it is not necessary.
With this being said... I decided to do the "quick soak", according to the instructions on the package. Once the soak is finished, I will slow-cook them overnight.
I bought three smoked ham hocks, so this should add a lot of flavor to the dish. I also plan on adding some stock, red onions, and plenty of garlic...and maybe a few other spices to it.
By tomorrow morning or early afternoon, the beans should be nice and tender, and flavorful.
This should be some good eats tomorrow. Along with bringing back a few good childhood memories.

Sounds really good and I have a supply of beans always at home so I shall try this also at some time since I have a slow cooker, Enjoy yours,

Get some ham hock if you can. Add some red onions, garlic, and some stock... Then if you have it, add a few bay leaves, and some basil. Then add a little salt and pepper. Not too much salt, because there is a lot in the ham hock.

Oh, that does sound good. One of my favorite dishes. Have to have cornbread with it of course.

@teresatrotter sautee with spices and put some water and let it boil for an hour maybe till they get cooked.
