Water spinach or locally known as “kangkong” is a green leafy semi-aquatic vegetable. Green leafy vegetable are known to be a good source of nutrients. Like fern, I use to eat stir fried dish out of this vegetable when I was young. It was when supply is just picked from our backyard garden. Nowadays, although I would like to prepare a water spinach dish, I won’t dare any more because I do not have the assurance where those vegetables sold in the market actually picked from. I can figure out those very nourished water spinach grown in the canal in front of the hospital structure.

When we buy kangkong, we soak it in water for 30 minutes at least so as to remove the clinging dirt.

Well I still eat those in our meals. My wife would usually buy them at the grocery already. I think they are pretty safe and so far clean to look at. We just wash it doubly before we finally cook it. I think those that are sold in the wet market is a bit risky as you are concerned about its source.
