Potato and tuna salad for dinner.

Now that I´m alone, I check on my several leftovers and start eating them one by one.
I had half a can of tuna and I decided to make potato and tuna salad. I have some bunch onions and cut a bit of the green part to add. There were some lettuce leaves from the day before yesterday and I checked what could be saved and added then cut finely.
II have the rest of a homemade mayo and I will make a dressing similar to those that Coal ( @TheSojourner ) made in Aruba. I´ll check on what lese do I have in the fridge. It is incredible how many meals we can make with "nothing" if the dinner is just for one person. Coral would clearly call it frugal cooking so I will tag it that way.

Coral definitely knows how to use it all up. I am going to have some multigrain pancakes that my husband picked up for me from Denny's. They are delicious. It's just about halftime for the Browns' game; so now is a good time to eat.

I've had tuna macaroni salad, which is quite similar. I will try making it with potatoes instead, this sounds delicious! Enjoy, Marguicha:) Coral doesn't waste food, she makes use of every little thing she has

@kobesbuddy I don´t waste anything. I live with a meager retirement pension. I have to live on a budget so that I can save for my only luxury: vacations once a year.

@marguicha We use to waste food sometimes, but not any more. Every little thing that I fix, gets used up sooner or later.

I do that a lot now that I live alone. When my husband was alive I had to do what he liked and what he could eat when he got ill.
