I´ll make a zucchini pudding for lunch.

I have a cooked zucchini that Tania brought me. I was going to eat itwith mayo but it was too old. So I will only use the flesh, add an egg and a fried onion and put it in small bowl with grated cheese over it. I think that I´ll serve it with a boiled potato as my brother brought me potatoes again. I have almost become a vegetarian lately.

A pudding from zucchini - wow! Is it creamy? Although I like my meats, I do think we are all better off eating smaller amounts of it . . . becoming more vegetarian is probably healthier anyway.

This was a big zucchini (the inside) cooked. I fried diced onion (half), a cooked carrot I had (mashed) and 2 eggs. I mixed all of it with 2 eggs and placed them at the oven.

That sounds pretty tasty. I have a zucchini and yellow squash that I will cut into chunks and cook them with some diced tomatoes w/mild chilies. I think I'll do that tomorrow.

I'm sure it's a good idea to have a meatless meal occasionally - not sure why actually, but I'm sure it won't hurt.

That is very good, you have to eat healthier and when the time comes to eat something very rich but full of cholesterol, it will not affect our health very much, as long as it is not usual, I think.
