Craving for Bibingka

I was craving for Bibingka these last few days. I knew I still had wilted banana leaves in my freezer which I bought last Christmas. I also had rice flour for making them.
So, I baked Bibingka (a Filipino Rice flour cake) after our dinner. I was I think 3 hours busy making dinner, cleaning the dishes and baking after that.
This was the first time I made Bibingka so I was searching for my old Filipino cooking book I bought in the '80s when I was on vacation in the Philippines. I couldn´t find it and so I was searching on youtube on how to do it.
I made the Bibingka from Panlasang Pinoy website. The Bibingka was good and my husband liked it but I didn´t like it with cheese on top. Maybe I should not put the cheese next time I bake it.
Yes, it is the Bibingka I have eaten in my home country but I want the old style Bibingka which my mother baked before. I think I have to ask my sister how to make it. I want the authentic simple one from the south of the Philippines.
Anyway, we have something for our snack now. My problem is, I still have a lot of banana leaves. I could make another Filipino delicacies using these wilted banana leaves but I don´t have coconut milk anymore. I think I will call a Filipina friend and ask her if she wants the banana leaves. I can give her some Bibingka, too.
How was your day? I hope it is good. Thanks for reading.

Is there a strong banana flavor to the cake?
The only other thing I've seen using banana leaves is tamales. I believe it's the southern most portions of Mexico that use the banana leaves to wrap the tamales in.

No, there is not a strong flavor of banana to the rice cake. The banana leaves are only used as a baking form.
Yes, I heard about Tamales. It sounds good but I have not tried it yet. Thank you @ScribbledAdNauseum

@thelme55 There are different types of tamales, even a sweet one that I have eaten and enjoyed before. Maybe one day you will be able to try them for yourself.

It is a Filipino traditional cake made of rice flour and coconut milk @LowRiderX. It is a common snack in the Philippines. Thank you. Enjoy your day.
