I cooked this afternoon a fried sweet potato in sugar caramel coating. Frying the slices of sweet potatoes was done smoothly and evenly cooked. However, the next step which is the making of sugar caramel was a failure. The sugar doesn't even close to be caramelized as I run out of gas.

Oh, sorry to hear that! Whenever I've tried to fry sweet potatoes with sugar, they tend to burn easily.

Cook the sweet potato first Ms.Vicki and when its done, remove it from the pan and then pour the sugar on the oil. When the sugar caramel float, add back the cooked sweet potatoes. Turn off the stove and Stir the potatoes using the ladle until the the caramel coats the slices of sweet potatoes. Was that the procedure that you did Ms.Vicki?

Oh, right now I have sweet potatoes cooking in my rice cooker! I can smell them as I read this! To cook in a rice cooker, you add 2.5 cm water and you can put in the whole potato or cut it. I cut this one into four blocks. They are so sweet when they come out, and so little effort!

@ZedSmart We have 2 gas tanks so that when one runs out, there is another one.
