Yes, I bought Another afghan. The image above is what I bought, but I'll take another picture once it gets here. This one was originally $14.75 , but I submitted an offer for $12.50 and the seller accepted it. In hindsight, I probably could have gone down a little more, maybe $11.50.. but oh well.
I won't buy another for awhile. There were others that I liked, but they had flaws that I could not fix.
Pepper Steak
Pepper Steak is simmering away. Early? Sort of, but that's okay. It smells like I remember, let's hope it tastes the same. I didn't add any tomato soup / sauce, I'll see if I need to in a little while.
Wednesday has been.. Well, not weird, but different. What about for you?

My mom made several and I am not sure what happened to them. I do like them though, and think they are pretty so I want to get a few. Not that we don't have plenty of blankets here already.

Sure! I could not find my grandmother's recipe so this will be from my own memory, and the method I used today.
Ingredients Needed:
Cube Steak OR Beef Tips (any kind of meat, really, but I prefer cubed steak)
1 Onion, Diced
2 Bell Peppers, Diced
1 large can diced tomatoes
1 large can whole plum tomatoes
Beef Stock
1 diced potato or can diced potato (optional)
Cooked Rice (for the side.
**edited** I had salt, pepper and paprika as well while cooking.
I cut and then cover the cube steak in flour like I do for regular cube steak meals, but I wouldn't say this is necessary.
Cook cube steak, add onions and peppers (or you can do those first, it doesn't really matter)
Then add canned tomatoes and potatoes. Add beef stock. I don't ever measure this, just add it for flavor and liquid. Bring to boil, then cover and simmer.
You can make this as a soup by omitting the rice, and keeping the liquid. I sort of try to strike a happy medium, and pour the mixture of rice to serve.
Yes, I am so glad I got this particular afghan. It will be well loved!

@ScribbledAdNauseum The weather is perfect - Sunny and in the 70s. The septic thing is just a routine emptying.
