Dandelion Honey

Did you know that the dandelion flower is rich in vitamins C and B and minerals such as potassium, iron, zinc, tannin, and all these minerals and vitamins strengthen immunity.
Given that it is spring and that this flower is in abundance, it would not be bad to make a jar of this honey.
All you need is 250 to 300 dandelion flowers, 1kg of brown sugar, 1 liter of water and two lemons. That's all!!
Wash the dandelion flowers, add 1 liter of cold water and bring to a boil.
When it boils, remove from the stove and leave it overnight.
The next day, filter the mixture through a strainer, and then strain it once more through gauze.
Add sugar and cook for about 1 hour. When the mixture becomes thick, add the sliced lemon (you will wash the lemon by soaking it for 15 minutes to stand in apple vinegar and then rinse well) after adding the lemon, cook for another hour at medium temperature.
When the honey is ready, take out the lemon and pour it into the jar, the right density is obtained when it cools.
In addition to the vitamins and minerals I listed at the beginning, dandelion honey is used in national medicine as a remedy for chronic coughs and strong stomach acid. This honey also helps with urinary tract infections. It is good for healing the liver and purifying the blood. It has a preventive effect on getting asthma and bronchitis.

@CarolDM Bee honey is very healthy. This is actually a thick syrup, the same in appearance as honey. I don't know if you know, but they call dandelion - a doctor. Then you can guess how healthy it actually is, dandelion leaves are more or less known to be used as a salad

@thelme55 The leaves in this photo are from another plant. A small part of the dandelion leaf is seen in the upper left flower. Also, below someone in the comment, I posted a picture of a dandelion as it looks in nature and what it is made of here

@Janet357 Almost the whole plant is edible. And the leaves and the flower (not literally a flower but that syrup / honey is made from it) even the root.

@Nevena83 It's brown sugar. Even diabetics have to take sugar of course in a much smaller amount, it is simply a substance necessary for the brain

It sounds good. I think part of the dandelion is poisonous but if they are boiled, probably not. For some reason there are not many here.

@LowRiderX The stem may be the part that is poisonous if the flower is boiled it is probably fine to consume anyway. Elderberries too have to be cooked or boiled to be edible.

@LowRiderX I don't think I've heard of dandelion honey before! I don't like normal honey so not sure about dandelion honey. Though, what you said down below is quite relevant to me regarding liver and UTI's. (actually I don't have a UTI but am having some type of unknown issue).

my mom wanted to make that, but she gave up. she was like "it would take too much time and electricity to cook it" and she threw dandelions away and in few days she simply bought honey. how did your honey making go?

@LowRiderX i have no idea, but in my city there's no "cheap" and "expensive" period to use it like in some other cities. it would take too long to make it, i guess, so she gave up

I did, but I used pectin and it didn't jell, it is more like a syrup. When you make this, please let me know if it became thick like jelly.

@Carmelanirel2 I didn't use pectin, you just haven't cooked it enough I'd say. There are a lot of recipes, I haven't really heard of anyone making dandelion jelly
