When snacks are different. A spinach salad.

This morning I cooked a big pot of spinach. You know how it is. You fill it all and then, When it is cooked, it is less than one third of it. I have changed my mind several times about lunch but I have some raw chicken meat enough to fry or to make a stir fry with veggies. I ruled out the stir fry, mainly because I woke up lazy. So I think that I´ll cook a potato and use part of the cooked spinach (with cream and cheese) on the side. But I was hungry and the potato is not done yet. So I just ate some spinach with lemon, salt and a bit of oil as a snack. Delicious! I´m mylotting in bed.

Good to try a different snacks. I have ordered spinach for the organic veggie market tomorrow.I should be making something with it for tomorrow meal. Love to use them fresh

@marguicha Good that you have a variety to include this healthy veg in your diet. I too love spinach and have them 2-3 times a week. I also have other green leafy veggies. Good to have our iron.

I often get a bag of baby spinach . . . and as a teacher once recommended, we eat them like chips . It's a healthy snack!

You're right about spinach cooking away. My grandmother served it up often when I stayed with her once a week and I got pretty sick of it.

I love spinach. And now I bought just leaves (more expensive) because that was all there was. They were organic and very delicious.
