Edamame for lunch!

I went to the local convenience store to get a package of senbei (rice crackers) that they have that I really like having on hand. I'm bored with my own cooking and I can't really buy pre-made foods because of gluten. So I just looked in the frozen food section and there were frozen, cooked and salted edamame. Do you know what they are? They are green soybeans in the pod. We boil them in salted water and just pop them out of their pod and eat them. They are soooo good but we usually see them during the summer only. I bought a package. All I had to do was run cold water over them to thaw them and I had lunch. Edamame are great for a meal because not only are they protein, they are also vegetable and fiber! So that was my lunch on this warm humid day! So good! What are some simple basic foods you like to eat for a meal?

I love edamame! I loved it during summer . . . my mom would often serve it on the side along with somen. We can get it all year round here - frozen - I like to keep at least a bag in the freezer.

We can get frozen in the winter here too, but hardly anyone thinks to eat it in the winter.
