Last night's dinner is today's lunch

I had a pound of organic grass-fed ground beef in the fridge but didn't know what to do with it for yesterday's dinner. In the end, I ended up making beef patties in Island Soyaki sauce. For the side I fried up two Idaho potatoes and also had some marinated forest mushrooms with red onion. It turned out really good and I even have leftovers for today's lunch. I could have probably finished the entire thing yesterday but I decided to leave some for lunch. Now I don't have to worry about what to eat for lunch. I just have to figure out the dinner situation. Not really in the mood to cook. I think I will just boil some chicken dumplings and have that with sour cream and a pickle on the side.

Hubby loves to eat that with vinegar and sour cream. I prefer to eat them in the water they've been cooking in with some sour cream, butter, and fresh cilantro or parsley or dried cilantro if no fresh one. It becomes kind of like a soup.

I love toast with honey but gotta have cheese as well on it. And some herbal tea.

Thanks. I prefer to come up with things rather than use someone's recipe, especially since I usually don't have all the ingredients recipes call for. Doesn't mean what I make is always super delicious but I try.

That sounds so good! My mom likes having the leftovers from dinner if there isn't enough for the both of us then she has it for lunch the next day.

Fried potatoes and mushrooms is a staple dish in Belarus. One of my favorite things to eat.

That turned out well ! I love having dinner leftovers (especially these days) . . . in fact sometimes I cook way more than needed so we can have leftovers .

I don't always wanna stand there and cook every day, especially during hot summer days. I'd like to make something and have it last for at least two days. Hard to do though because hubby has a big appetite.
