I know. It sounds strange but it is very good! It is vegan and Paleo friendly. I don't know about the carb count in nuts, though, so I won't say it is low carb or carb free. Still it is delicious! You need only a couple of ingredients: nuts (almond, pecan, cashews), coconut milk, a banana, and ground cinnamon. You soak the nuts overnight and then drain them and blend them with the rest of the things together until desired consistency. I make a batch of it and then have some each morning (heated up in microwave) until I'm done with it. It makes plenty for 3 or 4 breakfasts if not more. A little goes a long way! The one suggestion I'd make is to use half of the amount of coconut milk called for. Any more and it will be as thin as soup--it won't be like oatmeal/porridge. Have you heard of banana nut porridge before?
This creamy banana nut porridge is a great recipe for a cold fall or winter morning. It is vegan and gluten free and exceptional!

Yes, I've heard of banana nut porridge, but thought it was made with oats.

No, never heard of it before, can it be done with almond milk instead?

Hadn't heard of it. Sounds delicious. I do add nuts and all sorts of things to my oatmeal.
