I would like to thank @Raelove for her tip on tortillas!
I have the education and experience with fitness and nutrition, but never knew this tip! Maybe I had a blonde moment when studying?
Instead of consuming bread for sandwiches or the like, consume tortilla wraps! A wrap is considered less carb. As I am a carb lover, I do like my bread. Especially Italian bread. But, I can handle tortilla wraps.
With tortilla wraps, the options are endless. Pizza, burritos, tacos, taco salads, lunch meat sandwiches, really any type of sandwich. There are even desserts you can prepare if you search online.

@Spontaneo I found a recipie (5 stars) read quite a few comments so I knew which pitfalls to avoid.
The recipie made 8 tortillas....the first two were slightly undercooked....but the rest were superb. I didn't have a cast iron skillet, so I used my non stick frypan and just rubbed the pan with an olive oil soaked piece of paper towel between tortillas,

I just saw a recipe recently how to make homemade tortillas, it sounds interesting..but I don't have a tortilla press.

I either cook the tortilla wrap on a skillet or in the microwave.
