How to remove the bitter taste of bitter gourd?

Bitter gourd is a vegetable good for diabetes. Bitter gourd has this insulin-like compound that is good in controlling diabetes naturally. But a lot of people are not fond of its bitter taste. They want to get rid of it. Some people boil the bitter gourd. But this one removes the essential nutrients. Others rub salt in bitter gourd. I soak the sliced bitter gourd in water with salt. I soak it for one or two hours. It somehow lessens if not removes the bitterness.

Pardon me for saying this. Dr. Fernando, the diabetologist of the singer Gary V said ampalaya has nothing to do with diabetes. That is the reason why Gary V's endorsement of a supplement was stopped. Anyway, to remove the bitter taste, my mother would slice the gourd in half, remove the seeds and rub salt. It will be rinsed after 5 minutes.

Adding salt and boling the bitter gourd does help in reducing the bitterness. Adding spices also helps to hide the bitter taste.

Rub it with salt and soak it in the water. But I like the bitter gourd bitter so I dont do this.

I see. I like to clean it ready for cooking, but salt it directly with table salt, leave for 5 min. I massage the salt into melon. Then, after 5 minutes up, rinse off salt then cook as you like. No bitterness to 1% bitter taste melons become.

Speaking of bitter gourd,i saw someone a bisaya cook,what she did is,she removed seeds from it and chopped in tiny pieces,scrub with salt and squeeze it.She mix with egg and fry with onions and it tasted good.no bitterness at all. I remember when my sister cook mung beans,she will add bitter gourd leaves and they chew it much but for me i ate but choke without chewing ha.ha.

You can't remove bitterness entirely from it. Bitterness is it's signature taste. But you can take some sweet or salty foods after taking it
