Somebody May Want To Look In On Porwest Tomorrow

I am at it again. It is just what I do. What can I say? So, I found some meatballs I packed away in the freezer back in February, and I thought, I should probably do something with these bad boys. I put some lasagna noodles on the bottom of the dish just for good measure and to use up the box. On top of that I put a can of diced tomatoes and spread it out. Then I used just a wee bit of evaporated milk. I cooked up some egg noodles and made a mixture with cream cheese, oregano, Italian seasoning, and minced garlic. I layered a little bit of that into the dish. I sprinkled on just a bit of Parmesan cheese. Yummy. Then I placed all of the meatballs in there to pretty much cover everything up. This was a LOT of meatballs. I sprinkled on some chopped onions and some pasta sauce from a jar. Then put the rest of the egg noodle mixture on top. Oh yeah, I sprinkled on a bunch of shredded mozzarella cheese between the layers as well. It is in the oven cooking as we speak. Please look in on me tomorrow. Not sure what might kill me yet. The 8 month old meatballs or the dish itself. But either way it is cooking and I am going to eat it when it is done.

It should be fine as long as it isn't freezer burnt. Your creation sounds good.

For whatever reason I have never had too many issues with anything becoming freezer burned. Over the years I think I have just figured out how to package things to avoid it.

@porwest Correct packaging is the key for things going into the freezer unless you only need to store for a week or two.

@kareng Freezer paper works EXTREMELY well. I never use plastic bags for much of anything anymore. Even storing casseroles or soups, I can put it into an old big butter tub, put a bit of aluminum foil on top, seal the lid, and it keeps very well in the freezer.

@porwest Very simple. Just make the pasta and combine with whatever ingredients you normally put in lasagna. Pour into a pan and bake (I always use LOTS of cheese -- yum!)

It actually was very good. Not sure I will ever make it again. Just one of those dishes where I was just using up some stuff. But it was tasty. I do know that. Probably would do something similar in future though.
