With autumn come many things one of which are many types of squash. Some are now sold in stores year around like spaghetti squash, acorn, butternut and a few others but some years there's a lot more variation of types and colors in the autumn months.
Some years ago I saw a turban squash at Kroger's now they can be bought where I work too. My pic is a golden acorn I think. I've never truly enjoyed many squash but I know it's a healthy choice so I try to eat a few per season.
I did have a lot of spaghetti squash some years back. I ate it with butter and parmesan or mozzarella cheese, yum! I refuse to add regular sugar or brown sugar to make it more palatable.
Do you enjoy squash and if so which ones? And how do you eat them?

@MarshaMusselman My favorite to use, for everything is the red kuri squash (hokkaido). The chair is firm, it is not too watery, it has a naturally sweet taste. We are not big fans of squash and pumpkins, I buy when they are in season (October - November), but I do not store.

I've never had pumpkin soup. I imagined it might taste similar to using a different squash perhaps? Unless different seasonings go into it.
I was going to buy some pie pumpkins this year and freeze the pulp to make pumpkin bars and other treats but now may wait for a different year.

@LadyDuck to my knowledge we don't have that squash here. At least not where I live in Michigan but maybe I'll see if it's available nearby someplace.

Now I've never thought about using it for tuna casserole. I wonder if my husband would go for trying that as he could lose some pounds.
Those are my three favorites too but I do try one or two others from year to year.

@just4him I will have to keep that in mind to try that next time I buy that squash.
I used to have a way to open them easily but with my hands joints getting worse cutting most squash isn't easy anymore even after I Mike it first. Although hubby says if I use a larger knife is have better results so we'll see.

@crazyhorseladycx same here. I figure if I have to doctor it up that much why bother. I find a bit of salt and pepper brings out sweetness too.

Most of many doctor it up with brown sugar or syrup. I try not to do that but I suppose I could try some of my keto sugars instead.

Had I baked the one I had tonight it would have turned out better but I'm having a hard time getting around at present. I nuked it instead.
Oddly, I love butternut soup but not so much the squash itself. Maybe it was the way I made it?

@MarshaMusselman I baked it in my toaster oven and it was really good and even browned quite a bit

@RasmaSandra never thought to try out my toaster oven for that. I have a combo unit; air fryer, toaster oven, convection oven.

Sounds yummy! I do like squash but I'm one eater, so everything is just too big. The produce people do have cut ones, alas still too big for me. I like to eat same meals just 2 days, so squash is very good, but too big. Bottle squash is what I like. I like those flat round pumpkin Japanese pumpkin kabocha.

I'm not familiar with the bottle squash.
If you cut it, the smaller type like acorn you can freeze it for another time.

Acorn is one I'm not too familiar with too. But good to know about. Good to have food you can freeze for later. Thanks!

The only squash bread I'm familiar with is zucchini and it's delicious. I don't consider zucchini a true squash because the taste is totally different.
