A Special Food Request From The Hubby

I like cooking and making food in bigger batches because I do not always have time to cook, especially during week days. This way, my husband and I can just reheat the food for lunch and/or dinner. Typically, I just make whatever meal I can put together depending on what we have in the fridge and pantry, but every once in a while I receive some food requests from my husband. This time, he requested for my chicken macaroni soup. That is easy enough, right? Well normally it is, however, this time my husband requested for me to make the macaroni shells from scratch instead of buying the ready made-ones from the grocery stores. I do have to admit that fresh pasta tastes better, healthier, and cheaper. The only downside is the clean up, and it takes some time to prepare even if I use my pasta maker. I use all-purpose flour, eggs, water, and some vegetable juice if I want to enrich the pasta. I can also use gluten free flour, or almond flour for lower carbs, however I have to add xanthan gum or the pasta will not form. For my chicken macaroni soup, I boil some chicken thighs, then shred them. I use the chicken stock as base for the soup. I saute garlic, onions, then the chicken, carrots and celery. I add the macaroni shells, add some evaporated milk, salt and pepper to taste. Then I add some shredded cabbage and that's it. This is one of the easiest dish that my mom taught me, and also my favorite comfort food.

This sounds like a yummy chicken soup. I have not tried it with evap milk.

Try adding an evaporated milk, I always add milk everytime I cook chicken macaroni soup. It is very tasty.

Wow, you make pasta from scratch! I usually use the store bought one. I don't know how to make one myself.

Yes, I know how to make some. But like I said it is not as convenient as just using the ones from the grocery store.

I hope so, he better be! He is not a picky either so whenever he's got a hankering for anything I try my best to make it for him.

If I used the store-bought pasta, usually from 30 minutes to 45 minutes.
