This is a repeat of what I bake last Friday. Choco banana cupcakes. This is just one mixture and it makes a total of 15 cupcakes. I was to supposed to make homemade pizza to realize I do not have cheese and other ingredients for toppings. So this will do for snacks now. What's going on there?

what causes some to be raised/rounded, flat or sunken in the middle?

when you have a moist cake, usually it is not that rounded on top

I often make pizza without cheese, I almost like mine more without cheese, with garlic, capers and black olives (Sicilian Pizza).

@rakski I try to limit the quantity of cheese we eat because the animal fat is not very good for our health aging.
