Hunters gammon ...not chicken ...is it wrong !

It'll have quite a different flavour, I guess, but, after all, "Hunter's Chicken" must be a dish for hunters who have either returned empty handed or whose spoil is still outside waiting to be processed! If a previous hunting expedition had produced a wild boar which was duly brined and smoked and then cooked in the same way as a chicken would be, I'm sure that none of the hungry hunters would complain!
As a side note, if you wanted to give the gammon something of the flavour of wild boar, you could include two or three crushed juniper berries and some sage in the sauce as it cooks.

It's up to you. Quite often people will substitute one ingredient for another for whatever reason. I don't know exactly what, but it's perfectly okay. You can use chicken next time, but don't be afraid to change things up.
