Low Carb Recipe Idea: Chicken or Tuna Tetrazzini Casserole

I used to like the full carb version of this casserole/dish. It was noodles with either turkey, chicken, or tuna. It also had broth, butter, sour cream (sometimes) and a can of cream of chicken soup. Well, I think I could make some substitutes to make this a legal low carb dish. I have some heart of palms noodles that I could use in place of the regular ones. I can still use the turkey, chicken, or tuna. I will have to check on the soup though...however, I may just add a bit more sour cream if it is too high in carbs. May add some extra chicken flavor IF it is too high in carbs. Have you ever had this dish (regular, not low carb version)? Did you enjoy it? Would you try to make substitutions to make it low carb? How do you think it will turn out? Yes I know, lots of questions!

Cream cheese and a chicken boullion cube might substitute the cream of chicken and provide more creaminess so you won't have to use so much sour cream.

I was thinking of sour cream, but wasn't sure. I have the chicken cubes lol....so may use that. Still will have to go to the store again today if I wanna make it tonight! LOL

You might look to see if someone has already made a keto version of this or else find similar keto casseroles that you can adapt to fit what you want here. THat's what I do. @MommyOfEli2013

@ScribbledAdNauseum I looked but didn't see anything....so I just saw what ingredients would work and what would need substituting lol the cream cheese and chicken flavor cube should work well.

I've had versions of both; but I'm not a tuna lover. I would definitely try to convert it to low carb if I were in your situation. I think it will turn out fine.

Just try it and see if it works. You can try it a second time with adjustments after the tasting the first one if needed

I would make the substitutions and play around with it. That is what I do to make favourite recipes Weight watchers friendly. Do you like mushrooms? Are they Keto friendly? You can make your own mushroom sauce.

That's what I will do, someone else shared a great substitute above that I think I will try. I do not like mushrooms at all...plus I didn't want to have to make my own sauce lol. But thank you for the suggestion Oh, and I think they are low carb, but don't eat them so never checked.

Chicken broth could also be used, to create a wonderful base for the noodles.

I have made tuna noodle casserole as well as turkey, but not the low carb version.
