Spring Menu for April Meals

Happy Easter Mylottters. Sorry I didn't get a chance to come back on here yesterday since it was an exhausting day to order groceries. Since I haven't been to Aldi's in six months, I'll be trying out Instacart tomorrow morning with my order as soon as my EBT card's reloaded. I couldn't place it ahead of time since I didn't enough funds to pay for it. But it'll be delivered two hours I'll get my order from Acme with $10 left on my card to spare. For my spring menu for this month, I only have no chicken or dessert recipes this time around. So here we go with my top 10 selections: 1. Easy Roasted Garlic Parmesan Potato Noodles (Inspiralized)--Since I already had the ingredient for this recipe (red potatoes, parsley, Parmesan cheese, garlic powder , olive oil), I've made this easy dish on Good Friday ahead of time to kickstart April's recipes. I love simplicity. Stay tuned for the end-of-month report on how it turned out. 2. Kale Slaw Spring Salad (Taste of Home)-Spring is the perfect time to have salads which requires less to none cooking time. This would be perfect to have on a warm spring night. I just need kale, romaine, broccoli, fennel, Cole slaw mix, strawberries (I'll get this from Aldi), and red cabbage. This is going to be made on Tuesday night when it's warm in the 70s. 3. One Pan Shrimp Fajita Bowls (Pinterest)--This seafood dish looked very interested and amusing to try. Besides the shrimp I already have, I just need garlic, lime, variety of bell peppers, yellow onion, cauliflower, coconut milk, and cilantro. Another simple meal and perfect to make this Friday. 4. Spiralized Sweet Potato with White Bean and Kale Bake (Inspiralized)--This is the second recipe I'll be spiralizing this month with sweet potatoes (from Aldi's) and not yams. Other than the kale, I just need a can of diced tomatoes and white beans, since I have the rest at hand. This would be made a week from today. 5. Lime Marinated Baked Salmon (All Recipes Magazine, February/March 2021 issue)--This is another simple seafood dish to make for a weekend or any day of the week. And the photo looked so delicious in the magazine. I only needed three ingredients since I I had the rest: lime, Dijon mustard, and cilantro to make this next Friday. 6. Ginger Veggie Brown Rice Pasta (Taste of Home)--This is the first experimental recipes I'll be trying out next week with brown rice pasta. I never had them before. Other than brown rice pasta, I need coconut oil, ginger paste, green onion, garlic paste, shredded carrots, red pepper, red cabbage, and Rotisserie chicken. I'll be making this dish in mid-April. 7. Vermicelli Noodle Bowl (All Recipes)--This is another recipe I'll be experimenting to make since it has Thai flavors. Besides brown rice noodles, I needed a bunch of ingredients like Thai basil mint, fish sauce, beam sprouts and pickled carrots to name a few. I do love a challenge. And his would be also made in mid-April. 8. Salmon with Fruit Salsa (All Recipes)--This recipe rounds off my seafood dishes for this month. And it looks so easy and appealing to make with diced pineapples and pineapple juice, jalapeno, tomatoes, bell peppers, and a salmon steak (or any white fish to sub for it.) I'll be making this dish later in the month too. 9. Pepper Ricotta Primavera (Taste of Home)--This is another delightful spring recipe I've found from Taste of Home. And I basically have all the ingredients to make it except milk, garlic, ricotta, and red pepper. I plan to make this one a week from this Tuesday, 10. Zucchini Noodle Bacon Cacio e Pepe (Inspiralized)--This is the last recipe on my list to make this month. This lighter version of the spaghetti version requires zucchinis, bacon, Pecorino and Parmesan-Romano cheeses. Delish! And this would be made later in the month too. That's wrap it up for this month! Isn't it hard to spiralize potatoes? I think that would be hard on my hands. Doing the sweet potatoes might be a tad easier since you have more to work with. Let me know how those worked out. You mentioned salad. I'm hungry I think I'll have one now. Thanks for the reminder.

Not too hard. Depending on the potato, you might have to peel them, according to the recipe. It just takes practice to spiralize any vegetable. True. I will this weekend. Go for it!
