April recipe report card

Mylotters, April came and went last week. May arrived this weekend. So it's time for another recipe report card for April's recipes. All of them were hits, though I gave up on the cookies and cream Oreo Baked Alaska pie since I couldn't find the exact recipe for it. Oh well. Maybe another time, I'll give it a go. 1. Easy Roasted Garlic Parmesan Potato Noodles-A. This was fantastic for a simple and easy meal to make with the spiralizer. It came out so good, I wished I had leftovers for it for another night. But I would make it again for sure. 2. Kale Slaw Spring Salad--A+. This came out so delicious and so fulling in every bite. The kale and cole slaw mix worked well together to toss into one salad. And yes, I've made enough for leftovers to have on a warm spring night. 3. One Pan Shrimp Fajita Bowls--A-.This was another delicious one pan dish to make it the oven. Even with the taco dressing, it did give it a kick for flavor. I've made enough for one serving and had no leftovers. 4. Spiralized Sweet Potato with White Bean and Kale Bake-A+. I've made last week as my final dish for the month. It came out so good and tasted so well on the plate. I only wished I made enough for two, but I do have enough leftover ingredients to do it for one more time. 5. Lime Marinated Baked Salmon--A-. This was another seafood dish that was simple to make and cook in the oven. The lime juice worked out so well to marinate the fish and give it flavor. No leftovers. 6. Ginger Veggie Brown Rice Pasta-This was a real treat to try something new. The brown rice elbow pasta didn't taste so bad with the ginger spice and the veggies. And leftovers was even better. 7. Vermicelli Noodle Bowl--A-. Although the vermicelli was hard to find, except for in a Ramen soup mix, it worked out well to add with various salad ingredients and the shrimp. I only wished I've made enough for the sauce to add to the leftovers last week, which was heaven enough for me. No cooking. 8. Salmon with Fruit Salsa--A. The fruit salsa was okay with the jalapeno pepper that I could do without to make it taste better. But I handled the heat flavor in the mouth. The salmon came out pretty to pair with this salsa. No leftovers. 9. Pepper Ricotta Primavera--A. For a simple meal, I enjoyed this homemade alfredo sauce to add to the pasta. The peppers and the cheese made it a complete meal. Leftovers was very good too. 10. Zucchini Noodle Bacon Cacio e Pepe--This Zoodle variation hit it out of the park and tasted equally better than with regular spaghetti. It came out pretty delicious to toast in the pan. No leftovers. That's about it for April's recipes. If you want to try a recipe, let me know. Stay tuned for my May recipe list tomorrow afternoon.
