What's the meal plans for May?

Sorry I didn't get a chance to pop over here last night since I waited for my Uber Eats meal delivery arrive with my dinner. Sunday morning, my grocery list from Acme went a bit over my limit, so I had to cut some items back. Some I've gotten from Target via Shipt and the rest will be picked up at Acme this weekend. So here's my meal plans I'll be making for May as chicken meals and crockpot meals come back with two desserts, and spiralized recipes are on break for this month. Here we go! 1. Slow Cooker Chicken Ragu with Herbed Ricotta (New York Times)--It's been a long time since I've picked up a gem of a recipe from the NYT Cooking Section. When I saw it in the email last week, I know I had to try it. Other than chicken, I needed small carrots, olive oil, fresh thyme and oregano, can of crushed tomatoes, pappardelle (I'll be receiving it from Amazon on Thursday), parsley, basil and chives. This will be made this weekend. 2. Salmon with Pineapple Tomato Salsa (All Recipes Magazine, April//May 2021 issue)--This is one of the seafood meals I'll be making this month. Other than the frozen salmon I have left over, I just need Roma tomatoes, basil, and pineapple chunks. This is going to be my meal for Friday. 3. Veggie Stuffed Pasta Shells (All Recipes)--It's been a long while since I've made a stuffed shell recipes from Barilla. But this one features Ragu tomato sauce. Other than jumbo shells, I need shredded zucchini, onion, olive oil, baby spinach, shredded Italian cheese, and Ragu Think and Hearty Sauce. This is going to be scheduled for next week. 4. Farmer's Market Farro Bowl (Epicurious)--It's been a year since I've discovered recipes from that website. This is one of the recipes I've found from there that I'll be making this month. Other than pearled farro (which I never had before), I needed assorted ingredients like various veggies, gochujang, tofu, and unseasoned rice vinegar. This will be made later this month. 5. Crispy Chicken Salad with Yummy Honey Mustard Dressing (All Recipes Magazine, April/May 2021 issue)--This recipe looked so appetizing in the recipe. So I'm dying to try it out. Other than chicken, I need parsley, mixed spring salad greens, and other veggies. I'll be making this one next week. 6. Crockpot Swedish Meatloaf (Recipes that Crock)--I'm pretty sure I've made this recipe two years ago or so. I don't mind remaking it again since it been a long while. I've been swapping the ground meat with the turkey for the recipe and need graham crackers and onion, since I have the rest of the ingredients already on hand. In less than two hours in the crockpot, I'll have a delicious meal to make later this month. 7. Sky High Strawberry Pie (Taste of Home)--Since May is my birthday month, I'm celebrating with two strawberry-flavored recipes. Other than strawberries, I need a deep-dish pie crust, vanilla pudding mix (I brought at Target via Shipt), and heavy cream. I'll be trying this dessert recipe out next week. 8. Flatbread With Avocado Scallion Salsa (Epicurious)--This is the second dish from that website that looks so tempting to cook. I wonder which salsa dish would taste better or be equally fantastic to make. Other than an avocado, I need active dry yeast, scallions, cumin and coriander seeds (I need cumin from Acme this weekend), Greek plain yogurt, and parsley. And this recipes comes with a yummy creamy avocado dip you can use to dip pita chips into with pita or tortilla chips.) I'll be making this dish in mid-May. 9. Seafood Creole (All Recipes)--This is the second seafood dish I'll be whipping up this month. The recipe was oh-so-mouth-watering with the photos. Other than Old Bay Seasoning I already have, it needs white pepper (Purchased at Target via Shipt), tomato sauce, celery, green pepper, chicken stock, rock shrimp, bay scallops, haddock (I'll be doing cod as an substitute), and an onion. I'll be making this meal in two weeks. 10. (Low Carb) Strawberry Shortcake (Recipes that Crock)-Strawberry shortcakes are my favorite desserts ever to have. And it's so cool to make it in the crockpot. The reason I have low carb in parenthesis is because you need to CarbQuik (a low-carb version of Bisquick you can find only on Amazon and Walmart) and Swerve (which is a low-carb sugar alternative sweetener you can find in the same places. Acme has it for eight bucks.) So I'll be passing on this version and use plain Splenda and Bisquick. Other than strawberries, you need sugar-free whipped cream and heavy cream. 11. Meatsagna (Recipes that Crock)--Yes, you've heard me right. It has no noodles. Still swapping out ground beef with turkey, you need ground breakfast sausage, pork rinds (which I'll pass), shredded Parmesan and cheddar, heavy cream, marinara sauce, baby spinach. This looks interesting to make sometime this month. This is the first time my recipe list came out uneven. Oh well. This is what I'll be making this month. I'm also making a couple of smoothies to have for dessert as well. If you want me to share that list, let me know. If you want to try these recipes out, let me know. @KristenH I dont plan for a month. I plan on Saturday night for the week ahead. That way it gets written down on the menu board in the kitchen and the kids can see it. That way they arent asking me a million times whats for dinner. Tonight we had pizza rolls-homemade, and tomorrow we are having pulled pork I think or shepards pie.
