Do you know this kind of Stir Fried Vegetables?

Hello Good Morning/Afternoon/Evening to all my dear mylotters I woke up in cold and cloudy weather. It looks like that it`s going to rain again. Oh well. I just have to do my dancing exercise longer again Today, I will prepare a simple Asian dish, I learned from my mother. We call it ``Pinakbet or Pakbet`` I just don`t know the meaning It is a stir fried vegetables which includes bitter melon, aubergine, string beans and pumpkin. I cook it with shrimp paste so it is a little bit salty. You can also add some chopped chicken or pork How about you my dear mylotters? Do you know this kind of Stir Fried Vegetables? We make it in ginger garlic paste to give some more taste. Just had lunch. Made soya chunks today with rice.

@m_audrey6788 So this was neither fried nor baked. First marinated with curd and salt and some masalas. Then cooked in water.

I do like stir-fried vegetables although the cooker we have at the moment is not so good for stir-frying. And I haven't yet tried bitter melon.

@m_audrey6788 Me too, but that works really well when you have a gas flame. Here we have a cast iron hotplate and it's hard to get the same effect.

Yes I Know and I have tasted that food. It's only that here in Kenya we add beef in it. It is really delicious meal, enjoy your meal. As for my lunch I will ugali with fried mchicha. Have a nice day

I'm always looking for new items to add to my stir fry. Usually I start with fresh onion and garlic, finely chopped ( I try to mince my garlic ). Then I add a combination of broccoli, peas, zucchini, chopped tomato, carrots, sometimes I use corn and whatever other vegetable I have around the kitchen.

@m_audrey6788 yes, I do. One province actually has pinakbet pizza. Quite the novelty. I tasted it, I wasn't impressed.

We do have Mixed Vegetable preparation with beans, peas, cottage cheese, carrots and potatoes. Or a gravy based dish with above plus Pumpkin. We relish those. I did eat Thai Stir Fried Vegetables when I was once in NY City long time back.

@m_audrey6788 Plus we can try options in gravy and without. My favorite is dry but not totally dried up mix of carrots, peas, cottage cheese, beans and a small quantity of potatoes. Sometimes such a "Mixed Vegetable" goes well with curd.

No, Pretty and I don't eat that. I can't have shrimp but she would like it... but I don't buy it and make her starve when I can't eat something. I'm a mean dad.

@m_audrey6788 If Pretty cooked shrimp paste and cooked something for me in that pan I'd end up in the hospital. Sometimes, just going into a room where seafood has been cooked will cause me to have an allergic reaction. You're too good to your hubby.

I don't know that type of stir fried vegetables. I had a stir fry yesterday consisting of onion, garic, carrot, peas and button mushrooms. It was very tasty.

My mom really cooks pinakbet/pakbet the best ever taste in town. It's been part mostly of our daily dishes. I really like if prepare half cooked. My mom uses freshly picked vegetables from the garden in our backyard or even in our neighbors backyard. Just tell your neighbors if could have do some picking in their garden i really like it partnered with fried fish.
