We're having corned beef omelet for dinner

It's been quite a while since we last had this dish. I love any dish with egg though. Mom said we're gonna have corned beef but it's up to me how i want it cooked. What do you usually mix with omelet? My favorites are corned beef or shrimp.

Corned beef has nothing to do with corn. It's actually salt cured beef and called 'corned beef' because the salt used has grains the size of corn kernels.

I usually fill my omelettes with cheese or mushrooms or spinach after they're cooked. The only kind of omelette I mix things into is a Spanish omelette or tortilla, with onion, potato and red and green peppers, which is thick and turned (using a plate) so that it's cooked on both sides.

I have never tried corned beef in my omelet. I typically put in onions, green pepper, cheddar cheese, and sometimes left over meat such as beef or chicken. Or, taco meat and most of the taco fixings, sour cream and salsa on top.
