I bought two presents for Humberto at the butchers.

I bought a big calf tongue last week and discovered that Humberto ate some even for breakfast. Tongue is one of the best meats as it is cholesterol free. So I decided to provide for him and for me (Dixie is a vegetarian) and I also bought some ossobuco as he said that he loved it. Dixie doesn´t know much about meats and Humberto does not have much time to buy some for him. I´ll pamper him with that while they are pampering me having me with them.

That is so very kind of you, providing Humberto with meat that he will enjoy. I have always loved meat, but cousin Frank actually hated meat. There are so many varieties that I love, beef tongue is so delicious!

Ossobuco alla Milanese is one of my favorite dish and it is a very long time that I do not make it. I love tongue. In Italy I can find it cured and tiny sliced ready to eat, like the prosciutto, it is delicious. My husband does not want it, but I love!

@LadyDuck Here they sell the bones with the marrow too. I choose the ones with the biggest marrow. I bought 3 pieces because I forgot that Dixie does not eat that. So I told Humberto that the extra marrow was mine and that he could have more meat

@marguicha The marrow is my favorite part. In Italy they sell bones with the marrow, there is an Italian sauce that is made using the marrow. Also the real risotto Milanese should be made adding the marrow, real broth and saffron.

It is a cut from the shank of the veal. It includes the marrow of the bone.

Tongue is eaten in many countries. Ossobuco is a cut with bone included.

I remember really enjoying beef tongue when I was little, My mother always had a special way of preparing the tongue and I remember sitting at a table with guests enjoying it, I have not had a tongue in ages now, Enjoy the ossobuco,
