A wonderful potato salad for dinner.

The potato salad I made for dinner turned out delicious and filling. I added an egg, mayo, Dijon mustard and diced dill pickles. The potatoes were still warm and that wa even better as it is cold here. I brought the dish to my bedroom (warmer as I have an electric heater all night) but forgot to bring napkins. I have some wet ones ( moisted paper towels) always at hand so now my hands and around my mouth have a smell of baby butt just cleaned I´ll see now if there´s anything to watch on TV. I think that I have earned it. Tomorrow I will start cleaning the spice jars one by one. THAT is a hard job. This will me my last post for tonight but I´ll go and check yours. Sleep tight. See you tomorrow.

@marguicha I boil separately small cubes of potatoes, carrots, sweet peas, I let cool add mayo chopped pickles and capers.

Sounds yummy, especially for the mayo and mustard. Glad you had a nice alternative to napkins next to you, "baby butt paper towels" are good enough.

We eat this type of salads a lot in my country, if you add chopped white cabbage and carrots and a touch of honey mustard it would be called "Russian Salad". It is very common to use it at parties and weddings and if you make a basic dough of wheat flour and have cupcake molds and you turn the mold and bake the dough put there, you will get some savory tartlets stuffed with this salad.

I have never mixed cabbage with potatoes. We call here Ensalada rusa a potato salad made with peas and carrots.

I am very fond of potatoes. Here we put potatoes in many dishes, even for pork, chicken and mutton. We can also make potato fry and potato chips. We also have planted a potato sapling. I am not sure whether it will grow up and yield potatoes or not.

There are many ways of preparing it. A couple of my grandchildren don´t like mayo so I add oil and lemon juice to it.
