What's on tap for August's menu?

Better late than never, here’s my belated recipe list for this month. Due to a power outage in my hometown last night, I couldn't go online to post this. Since I would be foregoing dinner delivery for the future, for the next three weeks, I’ve stocked up on recipes to keep me cooking until Labor Day Weekend. Besides the salad bowl recipe, here’s what I’ve planning to make for dinner this week. I’ve already started with the first two recipes and would do another one today to get things rolling. Let me know if any of these recipes whet your appetite, and I’ll float you the links this weekend.
1. Zucchini Macaroni and Cheese (Ambitious Kitchen). This is a delicious twist on the classic macaroni and cheese dish with grated zucchini. This was part of the ZucchiniWeek list of zucchini-inspired recipes (which ended yesterday) from breakfast to dinner. Zucchini, pasta shells, parmesan and cheddar cheese, milk, and flour were the ingredients for this dish. And this was easiest one to make. It looked so appetizing. I’ve made it for Sunday night’s dinner.
2. Tomato-Feta Dogs (All Recipes Magazine, June/July 2021 issue)—Like with the French Onion Dogs I’ve made last month, this hot dog or brat toppings required cherry tomatoes, feta crumbles, cucumber slices, and tzatziki sauce for this Mediterranean-style recipe. It looked interesting for me to go ahead and try it out for size. I’ve made it on Monday night for dinner.
3. Fresh Corn and Tomato Fettuccine (Taste of Home)—This is the first of my summer pasta dishes I’ll be making this month, starting with tonight’s dinner. Toss some chopped medium tomatoes around with whole wheat fettuccine (I’m using spaghetti from Aldi’s,) husked sweet corn, green onions, Olive oil, red peppers, feta cheese crumbles, and minced parsley. This cool pasta dish is perfect for any hot summer night.
4. Cheesecake Factory’s Romano Chicken (Copykat.com/Pinterest)—I’ve found Copykat.com last year to try new recipes, but I never did. Now I’ve gotten a chance to do it for this month and months to come this fall season. This is simple chicken dish I plan to make this weekend with chicken breast, mushrooms, shredded Romano cheese, and spaghetti sauce. The side dishes I could pair it with would be endless.
5. Farmer’s Market Corn Toss (All Recipes Daily Deal)—I’ve found this nugget in my inbox last month and thought it would be perfect to make on any weekend. This recipe also featured husked sweet corn with onions, red peppers, zucchini, cooked chicken, and parsley. This picture was more than mouth-watering words. I plan to make this recipe next weekend.
6. Crockpot Meatloaf Parmesan (Recipes that Crock)—As the temperatures get cooler, it’s time to bring out the crockpot again. It’s been a long time since I made a meatloaf in the crockpot. The recipe for this sounds amazing and delicious to make. I’m swapping the ground meat with turkey for the meatloaf. Pizza sauce, shredded parmesan and mozzerella cheese are the other ingredients. I can’t wait to make this in late August.
7. Mediterranean Chicken with Spiralized Veggies (Inspiralized)—This is my only spiralized veggie recipe I’l be making later this month. This looks like another delicious winning diner to try out later this month. Other than chicken, you need seasoned salt, zucchini, yellow squash, grape tomatoes, kalamata olives, and lemon.This should be a surefire hit.
8 Mediterranean Tilapia (Taste of Home)—This simple seafood fish is perfect to have on a Friday night. Other than tilapia fillets, you need feta crumbles, diced tomatoes, artichoke hearts and ripe olives. Since I don’t like artichoke hearts, I’ll be swapping it out with kohlrabi. I’ll be having this dish next weekend since I have to order kohlrabi at Meijer’s via Shipt tomorrow, since it was out of stock at Acme Fresh Market last week and not sold in my local Acme store.
9. Olive Garden’s Venetian Apricot Chicken (Copykat/Pinterest)—This is the second recipe from this website I would be trying out this month. Other than the chicken breast and the apricot preservers in my fridge, Roma tomatoes, leek, garlic pepper, broccoli florets, and parsley are the only ingredients you need in this recipe. And the photo looked some appetizing and mouth-watering. So I’ll be making this one also next week.
10. Sun-dried tomato linguine (Taste of Home)—This is another pasta recipe I’ve found on Taste of Home’s summer meal section. The there basic ingredients are inquired for this recipe is parsley, linguine, and oil-packed sun-dried tomatoes. Perfect to make in less time after a busy day.
11. Avocado Peach Tomato Salad with Dilly Tahini (Ambitious Kitchen)—This is another perfect salad dish to make on a hot summer night that requires no cooking. Bring on the avocado, peach, cucumber, cherry tomatoes, arugula, dill, and basil to whip this salad together. This is on top to be made two weeks from today right before Labor Day Weekend.
12. Slow Cooker Texas Chili (Recipes that Crock)—Once again, we’re now getting closer and closer to cooler weather after this heat wave dies down. And there’s no better way with this Texas chili with ground turkey, turkey broth and bouillon (I’ll be using chicken for both), an avocado, a lime, and shredded Colby Jack cheese. I’ll be making this also towards Labor Day Weekend as well.

I still have some meatloaf to eat. When I am finished with one thing for my main course for our Sabbath I think of what I want to make next. I wanted to do schnitzel but so far have not found the schnitzel I used ot make. I believe I will make chili afterwards.
