Yes really tastes good I do love capsicum too but I avoided using it since my little sister and son never likes it at all

We had baigan bharta ( mashed smoked eggplant with onion, tomatoes, chopped coriander and green chillies) and chapati( Indian bread) for our dinner.

We also cook this type of rice in India. It seems yumm in your display picture.
Here we call it Vegetables Biryani
