I do feel better

I can tell I feel better today, I figured out how I wanted to cook the chicken I thawed. My sister receives commodities, and food bank food and anything else her community has for seniors, because the managing agency of her senior apartments goes and gets it and delivers it. Even if she does not want it. She gives me lots of food, and it is time for me to start cooking some of it up.They distribute chicken hind quarters in ten pound bags. That is a lot for one person. She keeps some of it, but right now I have three bags of it. Thirty pounds of chicken. So I thawed some earlier this week. I was feeling so bad I could not figure out what I wanted to do with it. Today I felt well enough that I just put it in a pan and roasted it. I am taking off the skin and bones. We ate some at lunch.Bob is not tolerating food well right now. So just nice bland chicken along with some fruit and yogurt made a good meal. I have saved the bones and will roast them then make bone broth for soups this winter, it will be great. I got up fairly early today, but then took an hour long nap before 9 a.m. I want to get back to work tomorrow if I can.

That is a lot of chicken!! I would be making chicken and dumplings, one of my favorites!! I hope you feel well enough to get back to work tomorrow.

I do feel better, and the chicken helps, I think. Hubby does not care for dumplings or noodles. I will make stuffing with chicken at one point this weekend. Tonight we will have chicken with rice and veggies.

I had very soupy chicken and rice, with garlic, celery seed, black pepper and sage. Pretty tasty.
