It is a good thing that I cooked dinner last night

because this afternoon I have to make my mother-in-law's mashed potatoes and a homemade green bean casserole. (no canned soup here! never!) At least I get out of work early. I am going to try to take a nap after work because I am awake at an absurd hour but then I will be busy in the kitchen. The potatoes aren't particularly difficult--peel (I hate that part), cut, boil, add butter/sour cream/cream cheese/kosher salt/ground black pepper, beat them in my KitchenAid stand mixer, and then whip the hell out of them. The green bean casserole is more involved. I have to cook the beans, make the creamy mushroom mixture, and fry the onion slivers. I didn't grow up with the green bean casserole but I decided to start making it one year after I saw the recipe in one of my then-new cookbooks. My family likes it. They are obsessed with the mashed potatoes. I am too. I don't make them often because they are full of fatty things. In spite of that they are light because they are whipped. I'll be busy this afternoon! What are you making for Thanksgiving?

Yes, it is good idea to save time by cooking earlier. This year I decided to go with ham and a huge turkey.

As I mentioned before, we are getting our turkey dinner from Giant Eagle. Hubs will make mashed potatoes and sweet potatoes. Everything else is store bought.

I plan to do my baking tonight before we do all the cooking tomorrow morning. I'm making pumpkin bars with cream cheese frosting and my sister is making cheesecake brownies, yum.

We do not celebrate Thanksgiving over here. I love mashed potatoes too but can't have too much as I have digestive issues

Thanksgiving was last month here I am just thinking about Christmas dinner now. This year I don't have to cook because I am going out for three different meals over the holidays. Hope you are able to get a nap after work.

I need to get the ham out of the freezer to thaw. Will probably do baked potatoes with that tomorrow
