This week I had an eggplant overdose. I had bought 3 eggplants last week thinking about an escalivada I finally did not make. My sister brought me two giant ones from her house (she plants enough veggies for the whole year) and then, later, Claudia brought me one delicious tender one from her own garden. Today, besides making the eggplant picle with the old eggplants I decided that if Claudia´s eggplant was not used, it would run the same end as the other ones. So I sliced them in thick rounds, covered them with a beaten egg and then with bread crumbs. Then I fried them and served them with the leftover rice. It was delicious. I served first the rest of the soup I made yesterday (another pot I took out of the fridge), and then the rice with the round eggplants. I had a small piece of chocolate cake for dessert. I serve personally the cake because Rosa could eat it all if I let her. What was your main meal?
