Egg sandwich

Last night, I found myself making some egg sandwich spread. It was my mom's recipe that I could never ever forget. But it's too simple.
I remember she would prepare egg sandwich on New Year's Eve. Among my sisters, it was only I, the youngest, who was really interested in how she would prepare the sandwich and she would allow me to help since it was too easy.
The only time we can see our mom in the kitchen was when she prepared egg sandwich. Don't get me wrong, she was a great cook but she had no time to as she was extremely busy building her very own empire. Sometimes when my father would request some special food that our cook didn't really know how to prepare according to my father's liking, my mom would do that too.
I hope Craig would like this egg sandwich as much as I did when I was young.

@averygirl72 it's a sandwich spread with lots of cheese and a little bit of condense milk to counteract the sourness of the pickles from the sandwich spread.

So what is in the egg sandwich spread?
I make a delicious tuna spread myself.

@toniganzon will try this out soon.
How many hard-boiled eggs do you usually use?

Very interestingly, it was just yesterday that I made an egg sandwich to take to work with me to eat for lunch. It looked surprisingly similar to the sandwich in your photo!

@toniganzon Nice! I'm playing in a national paintball tournament this weekend in Dallas, Texas, so I will mostly be eating fruits and nuts throughout the day, along with energy and protein bars.

For some reason, I normally eat them only every New Year's Eve. I guess because it has become a tradition with my mom. But now I will try to change that. It would be my breakfast meal alternately with an oatmeal.

luck you. I remember we have several maids. One who cooks. Two who cleans the house. And a laundry woman. Not to include we each have our nannies. And they all live in our house. Both my parents have different businesses to take care of.1 person likes this

I don't know why we didn't eat it quiet often before. Only during new years eve. Probably because my mom only have that time to prepare it. And she knew we wouldn't eat it if it was just the maid or our nannies who made it.

I don't really write about recipes. I never do that here in Mylot at all. Coz I don't really cook.

This sandwich looks so cute. Put a nice cute flag on top and it will complete the look; like how they serve in restaurants etc.
