What's for dinner? May 14

What's going on the dinner table tonight? I want to know! I'm making a dish inspired by a recipe in my New Midwestern Table cookbook. The recipe is called "Butcher's Kraut". It calls for cooking pork ribs, sausages, and hot dogs in sauerkraut with seasonings. I don't eat hot dogs or sausages and am not a big fan of ribs so I'm substituting 2 bone-in pork chops and bacon lardons. I have the bacon sauteing in the Instant Pot and I've already browned the seasoned chops. When the bacon crisps up I'll add the sauerkraut, a bottle of beer, and a chopped up Granny Smith apple. (I learned the apple trick from my ex.) To go with it I'm making mashed Yukon Gold potatoes. Yum. I'll dig something green out of the freezer so I can call it a balanced meal. I think I have some broccoli in there. That's what is happening here. What are YOU having? Share with us!
