Super Belated May's recipe list

Here you go Mylotter friends. Sorry so late and better late than never. Here’s my mid-May menu plan for this month. Besides the three leftover recipes from last month, these’s the line-up with five new recipes for May. Some have been made, some I haven’t plan to make within a week. 1. Portobello Burgers with Goat Cheese (All Recipes Magazine, March 2022/April 2022 issue)—A while back, I’ve made portobello burgers. But I believe these burgers are different since they had goat cheese and beets in the burger. Whole wheat buns, crumbled goat cheese, portobello caps, baby spinach, and beets are the main ingredients for this dish. I’ve made this a week ago. 2. Ricotta, Bacon and Arugula Skillet Pizza (All Recipes Magazine, March 2022/April 2202)—This pizza reminds me of having white pizza with green peppers as a kid. The ricotta takes place as the white sauce, topped with crispy bacon and arugula to complete the pizza with refrigerated pizza dough. Simple recipe to make in less than a half-hour for a delicious meal. 3. Spaghetti & Chicken Meatballs with Buttery Marinara (EatJustlikeHome)—Since I still love the pasta sauce, I decided to try more recipes from the website and carried it over from last month’s recipe list. This time, it’ll be just one jar and one sauce: Buttery Marinara. Since I didn’t have ground chicken, I’ll be using ground turkey instead. A twist on this classic recipe for the meatballs. 4. Chicken Parmesan Stromboli (Eatjustlikehome)—This is another twist on the classic chicken Parmesan dish. Only the sauce is used for dipping, and sliced breaded chicken tenders with sliced mozzarella cheese are stuffed and folded inside the pastry dish for a scrumptious delicious meal. 5. Pesto Mushroom Chicken Lasagna Roll-ups (Ambitious Kitchen)—This is the first recipe I’ve selected from the AK website to make this month and carried over from last month’s recipe list. Shredded mozzarella, ground chicken, baby bells, lasagna noodles, and spinach make up this meal. 6. Buttery Marinara Spinach and Cheese Manicotti (Eatjustlikehome)—My late mother loved manicotti whenever we ordered Italian food. It was her favorite meal. This is an homage to her and her memory when I’ll be making it for the first time. Frozen spinach, parsley, ground black pepper, Lite Italian dressing, manicotti shells, and Buttery Marinara sauce. Since my local store didn’t have in stock, I ordered it from Amazon Prime and expected to have it arrive this weekend. This would be the last recipe I’ll make this month. 7. BBQ Ranch Chicken and Greek Yogurt Quinoa Bowls (Ambitious Kitchen)—This is the last carried over recipe from last month’s list to be made next week. Since it requires a long cooking time, I’m going to hope to start it early as planned. BBQ Sauce, avocado, scallions, chives, Roma tomatoes, Greek yogurt, and chicken make up this meal. 8. Loaded Vegetable Quiche (All Recipes Magazine, April 2022/May 2022 issue)—This breakfast recipe is perfect to make for dinner or even for brunch, Besides eggs, you need Roma tomatoes, shredded cheddar, green pepper, onion, mushrooms, crumbled goat cheese, and deep dish pie crust. It does sound delicious just by looking at the photo. That’s a bit it for this month’s list. Which recipe whetted your appetite to try to make this summer? Most sound delicious to me, but I can really use #8. It will be loved by my vegetarian son and his girlfriend. I’m always looking for new recipes. Thanks for sharing.
