Tuna fritters with Cheese Sauce

This recipe is from 1959 by Carnation Evaporated Milk. Personally, combining tuna patties with cheese sauce doesn't sound or look good to me. But, I love the idea of making a cheese sauce without having to use flour to make it thick. And, the tuna fritters sound good, too. Why not use both recipes for different things? The cheese sauce would be good for french fries or tater tots; or on hot dogs; or over baked potatoes; even with eggs. And the tuna fritters would make a nice lunch or be perfect for making tuna sliders (mini buns). What do you think?

I like the idea of using two recipes for two different things.I like carnation evaporated milk also it is very good for baking and cooking and i like the fact you found this clipping recipe of 1959 and sharing it here on mylot.

@jerzgirl I like looking at old recipe like that ,my mom used to peel them off the can and collect them but I don't know whether she still have them or not.

I just don't want cheese in my tuna unless I'm getting a tuna hoagie (sub) - then I'll get a slice of cheese on the sandwich because I like butter with my tuna salad and the cheese provides a similar flavor.

I am NO expert. I never learned how to cook. My mother never taught me. But, when I first had cable, I watched Food Network every single day and learned so much I never learned growing up. I'm still no expert, but I can pull off a lot of things I never could do before.

I am with you on this. I would never combine tuna patties with a cheese sauce, no way. I could use the cheese sauce for another recipe.

Right? Maybe hollandaise sauce, but not cheese sauce. Especially, bright yellow cheese.

@jerzgirl Hollandaise for sure is a better choice, also a dill sauce would be fine.

Yes, here in the United States, yes. But, they're not the only company that makes evaporated milk. There might be other brands where you live. Make sure it's not "sweetened condensed" milk. You don't want heavily sweetened milk at all. Evaporated. Not condensed.

Like you, I would use both recipes for different things. For me, cheese sauce would be for hotdogs, and tuna fritters for lunch.

I don't think I'd do that, either, but there are a lot of things to use cheese sauce with that I do like.

I might even make chicken fritters because I have a lot of canned chicken along with the tuna.
