Cottage cheese from spoiled milk

We had some extra milk which got curdled while it was being heated. I have put it in a muslin cloth to drain out the water and hope to get cottage cheese (paneer) which I will use in some dishes The paneer that we get in the market can be cut into neat pieces while what I will get will be in a lump form. I would like to know if there is anything else one needs to do to get what we can in stores. Also if this cottage cheese that we make at home is kept for longer periods it turns bitter.

I know that it is made from spoiled milk but l have never tried doing it. I am sure there would be details about cottage cheese making on Youtube.

@allknowing to me that wouldn’t be a problem as long as I didn’t have to serve it to guests or get my kids to eat it.

@shaggin It is the best cottage cheese I could say without adding any preservative except that mine I could not cut but you will read a post here how it can be hardened.

It tastes good but does not look refined as that which we get in stores.

You need to cook it a bit for it to harden before straining it

I wonder if the bought cheese has some sort of preservative in it - maybe even just salt?

In our home we split milk by adding some vinegar and boiling the milk for some time. We tie the curdled milk in a cloth and place a heavy stone upon it. This makes the paneer tough enough to cut into neat pieces

I have tried that too and as you say, when made at home it isn't the same as the shop-bought type. When I have made it it comes out kind of grainy, whereas the cottage cheese from shops is in much bigger lumps and paneer comes in cubes. I don't know what they do to achieve that!

Wash it with cold water and it won't get bitter but it can't be preserved for long.
