Today, 23rd November is celebrated as "National Cashew Day" in USA .
Actually, Cashew isn't a nut as it's generally referred. It's actually a seed harvested from the cashew tree.
With weathery leaves arranged in spiral shape, the evergreen cashew tree is as high as 32 feet and often has irregularly shaped trunk.
The largest cashew tree in the world covers about 81,000 sq ft and is located in Natal, Rio Grande do Norte in Brazil.
Cashews have several benefits as it's considered excellent source of antioxidants. It has fiber content and healthy fats.
It has minerals like Copper, Magnesium, Manganese etc which helps to boost immunity, good for heart and brain health, good for skin etc.
Cashew Oil is used as dressing in salads too. Cashews do not develop a hard wall around the seed instead have lining around the seed that is filled with caustic fluid.
Cashews are eaten as salted or roasted or even as it is in pure form. It's used in so many food items like in Cakes, Cookies, as toppings in icecreams and it's used as a paste in Indian grevy's too.
I like to eat cashews as it is. Sometimes in salted manner as well. I try to eat dryfruits as frequently as possible for maintaining good health.
