The carrot plantations remain nascent in the winter.

In the countryside in Bengal there are lovely agricultural farms. Potatoes, cauliflowers, radish, cabbages all are grown in the winter. The carrot plantations remain lush green. At the nascent stage the raw carrots are not seen. Once they become ripe by the end of January they are sold and earn a lot of revenue.

The demand for Carrots in North India in winters is high. They can be used in vegetables, Salads ( high demand in Marriage Dinners/Lunches) and "Gajar ka Halwa"(Dessert made from Carrots). Nothing like Fresh Carrots. In Summers, we normally get preserved Orange colored Carrots but they don't taste as well.

thanks Prikhaji another popular food item both in North India and calcutta is the vegetable chop. It is like a cutlet created out of carrots and beet. Those who are vegetarian they enjoy the dish

Thanks for the fascinating information about Bengal that I didn't know. That is a huge and lovely green field behind you. There is an area to the north of where I live in my state that grows food like carrots and cauliflower but they grow it in the Spring and summer.

thanks Lenore it is because yours is a temperate country. It snows now and best vegetation will happen in Spring may be in March. In Calcutta it is a tropical country vegetables like carrot radish potatoes cauliflower are grown in winter and vegetables like bottleguord ladies finger are grown in summer
