What's for din? January 6th, 2023

I took out two pounds of ground beef earlier today knowing that I either wanted to make meat loaf or taco bake. I realized a couple hours before dinner that I didn't have any refried beans or taco seasoning, and really didn't want to make a special trip to Dollar Tree to get those ingredients. Especially when I pretty much had everything I needed to make meatloaf, mashed potates and a couple other sides. So I made mini meatoafs, using a muffin pan. I don't do anything special to my meatloaf. It's just ground beef, seasonings, eggs, ritz crackers and ketchup. I put a little brown sugar in it this time, and we didn't have eggs, so I used a spoonful of mayo to bind it instead. It worked out pretty good. I didn't have milk, but I did manage to make pretty good mashed/smashed potatoes without it. I used butter, sour cream, salt, pepper and shredded cheese and mixed that with the potaotes. They turned out good. I used a jar of premade Turkey gravy from Dollar Tree, because I didn't have the stuff to make homemade gravy. I steamed some mixed veggies and baked some crescent rolls in the oven, and we called it a meal. It fed all three of us, good portions. Chris is working on his second plate, and there's just some veggies, gravy, a scoop of mashed potatoes and a crescent roll left. The picture attached to this post is of she child's plate. She asked for a lot of food, so I loaded her down. You'd be surprised what that little scrawny girl can pack in. So that's what was for dinner here. What did you eat at your house?

I thawed out some of my homemade crockpot tater soup and had a big bowl of it, along with some egg whites (not in the soup, mind you). A Fiber One bar and hot chocolate for dessert.

@thislittlepennyearns — it’s as simple as you can get: russet potatoes and chicken broth, cooked in a crockpot. Then I purée about half the potatoes for thickness, and then season it.

@FourWalls Well that is pretty simple. LOL I do a cream base, cheese, butter , garlic, bacon lol.

Your dinner sounds good. When I make meatloaf, I always make mini meatloaves. We had steak, baked potato, and spinach.

Sometimes, we all just go with what we have on hand, either out of necessity or not wanting to go to the store, or whatever reason. Over the years, I've made soups and casseroles out of leftovers, so I do get it. Last night I fixed homemade baked chicken tenders, mashed potatoes, gravy, green beans, and buttermilk biscuits. I had some homemade cookies for dessert. My son and a friend were here, they ate two plates each, so I guess they enjoyed it! Tonight, was a lot easier, chili, and there was ham and cheese and bread if they wanted a sandwich, as well as the rest of the chocolate chip cookies. It's good that you just made it work, so many people can't seem to do that. Good job.

I've made meals out of less. Having even partial ingredients to make a meal happen is still a blessing and I am glad to be able to make wholesome full meals for my family, even if they aren't exactly the traditional way to do so.

I'm glad all your substitutions worked out! There was a lady selling tamales in the Walmart parking lot, and we bought about 30 from her. That's dinner tonight, along with some rice cooked in chicken broth and salad.

There are some dinners that would never happen without your help. YUM. I love me some tamales. I have never prefected making them. But I would love to learn how to make them authenticallyh.
