Belated January 2023 Favorite Recipe Report Card

Mylotters, as promised, here’s my belated favorite recipe report card from last month. To kickstart 2023, all of these recipes from the past two years came out pretty good for an encore round. Enjoy! 1. Easy Porcupine Meatballs: A+. -Like last year, I instantly loved these easy porcupine meatballs over rice. Even with adding cheese and using ground turkey instead of beef or pork, these meatballs score the same grade as I did last time. No leftovers, since I’ve made enough for one round. 2. Easy Slow Cooker Chicken Pesto Pasta: A-. Instead of using a jarred pesto, I made it with the dry pesto mix. And this worked in a pinch to make it in a short amount of time. Since I didn’t have pappardelle, the penne pasta was a great alternative to swap it out. If I do make it again, I would use it with pappardelle if available at my local grocery stores. Leftovers came out even better. 3. Stuffed Meatloaf with Gravy: A+. Once again, this stuffed meatloaf tasted so good the second time around. The gravy was thick and creamy to coat the meatloaf on the plate. With plenty of ground turkey to go around, I made enough for two and split it into one helping. Leftovers came out so good. 4. Mushroom Lovers Pasta :A+. For this encore, I luckily had all the right mushrooms to make this delicious pasta dish. And just like last time, it came out so good to have it tossed in with the ziti pasta I substituted it for the ditalini. So hearty and filling, it hits the spot. No leftovers. 5. Slow Cooker White Wine Chicken Stew: A+. Slow cooked for a few hours in the crockpot, this chicken stew was rich and hearty with the herby flavors, just like how I made it a long while ago. Even shredded instead of sliced, this was almost close to perfection. Leftovers were equally good as well. 6 .Mediterranean Vegetable Pasta: A-. This was another winning supper meal to make with any pasta. I didn’t have all the vegetables required in the recipes, so I altered it with what veggies I had and didn’t expire. I used zucchini, red and orange pepper, zucchini, cherry tomatoes, and diced red onions. Overall, it came out pretty darn good with those vegetable substitutions. No leftovers. 7. Turkey Meatballs in Tomato Basil Sauce with Burrata: A+. Once again, this recipe hit it out of the ball park. Since I didn’t have the pasta sauce, I used a regular can of tomato soup as a substitute and tossed it some dried basil to make it like the sauce. And with the switch with shredded mozzarella for the burrata, it came out pretty darn good after all. I’ve enough meatballs to have it over pasta for a second round for leftovers. 8. Slow Cooker Butternut Squash and Chickpea Pasta: A- I still love this recipe with cubed butternut squash and dried chickpeas to toss in with the pasta. This was so hearty and filling in every bite. I’ve made enough to have two rounds of leftovers. That’s a wrap of my super-belated January favorite recipe list. I’ll post my belated February list on Monday. You certainly have a great variety of food Kristen and so healthy too. It is good to eat a variety of food they say. I had never heard of any of these. Thank you for the links as well.
