My Belated Mid-February Recipe list 2023

Mylotter friends, as promised, here’s my uber-belated February recipe list with links on what recipes I’ve selected to make this month. Since I’ve started work, I’ll be looking for recipes I can make in less than an hour with a short prep period to make on the days I work. And crockpot recipes I can make on my days off, or have a short cooking time if applicable. Since I’ll probably be working Sundays twice a month, I won’t have time and energy to make dinner, and reserve it for leftovers. I’ve already started making the first three recipes from my list last week to have a belated head start. With February ending a week from tomorrow, I’ll be making the rest every other day until a week from today. Dig in and enjoy this list. Pretty soon, I’ll be making one for March over this weekend to share next week. 1. Slow Cooker Chicken Stroganoff (AllRecipes.com)---Besides beef and turkey stroganoff, this is a chicken version you can make with a couple of ingredients to toss into the slow cooker. Butter, cream cheese, cream of chicken soup, Dry Italian salad dressing, and chicken breast. After five hours on high in the slow cooker, dinner is served and ready for eating. I made this recipe a week ago. 2. Irish Bacon and Cabbage Soup (All Recipes Magazine, February/March 2023 edition)--This soup is perfect to have on a cold night to warm you up. Since I couldn't find irish or center-cut bacon, I’ve used turkey bacon as a substitute. Red potatoes, green cabbage, a can of diced tomatoes, fresh parsley, black pepper and kosher salt are all you need to make this soup in less than an hour. I made this recipe mid-last week too. 3. One Pan Thai-Inspired Yellow Coconut Curry with Chicken and Rice (Ambitious Kitchen). This recipe has a hint of spice for a kick to add to the browned chicken breast. You’ll fold in Basmati or jasmine rice and add green onions, orange and red peppers, cilantro, raisins (optional), lite coconut milk, and yellow curry powder with a couple of other spices. Just cook it in one pan in less than an hour, and dinner’s ready to go. I’ve recently made this dish this weekend. 4. Crockpot Ham and Cheese Bake (Recipes that Crock): For my second slow cooker dinner for this month, this recipe requires a few ingredients to toss into the crockpot. Macaroni, cubed Velveeta, melted better, shredded cheddar, milk and evaporated milk, and cubed ham. You can use leftover ham or store-bought cubed ham, like I did to save time. You can do this high for 2 hours or low for four. This is being made tonight for dinner. 5. Creamy Bay Scallop Spaghetti (All Recipes Magazine, February/March 2023 edition): This is the second recipe I’ve selected from my recent issue of AR Magazine. And what’s best about this meal, since it’s almost time for lent, it can be made in a half-hour. Spaghetti, bay scallops, garlic, lemon zest and juice, heavy cream, fresh parsley, and dry sherry. This is going to be made on Ash Wednesday night after work. 6. One Pan Green Chicken and Rice (Ambitious Kitchen)--This is the second one pan dish from the AK website that has almost the same ingredients as the yellow coconut curry chicken rice dish. Though you need a jalapeno and lime juice for this one. This meal would be made in exactly one hour. This is planned for sometime this weekend. 7. Maple Mustard Salmon (All Recipes Magazine, February/March 2023 issue): For the last meal to make this month, I’ve selected an easy salmon dish. It has only a few ingredients like maple syrup, ground mustard, lemon juice, frozen salmon filets, minced garlic and fresh thyme, lemon juice, and kosher salt, black pepper, and olive oil. This could be paired with any side dish and made in less than a half-hour. This would be made early next week to finish out the month. 8. Bonus Recipe: Cookies N Cream Pop Tart Dump Cake (Recipes that Crock): This is my only dessert recipe I’ll be making this weekend this month. Like the strawberry and Smores ones I made last fall, this is the third one I’ll be testing out to have as a dessert. You just need Ores, marshmallow creme, chocolate cake or devil’s food cake mix, butter, and Cookies N Cream Pop Tarts. Yum! These pop tart dump cakes can be made in less than two hours in the crockpot. That’s it for my belated recipe list to make this month. Yum your cookies n cream dump cake recipes sounds yummy I hope you enjoy it. I am sure you will have no problem finding recipes to make that are fast and easy
