Mylotter friends, here’s my February favorite recipe report card. Since I’m behind schedule, due to work, and better late than never, here’s how my recipes turned out last month. Feel free to check them out and pick your favorites to try it for yourselves. Slow Cooker Chicken Stroganoff-A+. I really liked this easy slow cooker recipe with only a few ingredients needed to toss it into the crockpot. Just like beef and turkey, it tasted the same with chicken as the main ingredient. It came out so good and filling. Leftovers came out pretty good. Irish Bacon and Cabbage Soup-A-. Since I wasn’t able to find Irish or center-cut bacon, I used turkey bacon for this soup recipe. It did compliment well and hit the spot. I thought the soup was pretty good and tasty to have on a cold night. Leftovers came out good. One Pan Thai-Inspired Yellow Coconut Curry with Chicken and Rice: A+. Though this recipe had a little bit of heat to it, it wasn’t too bad. The cocomilk milk made the curry flavorful for the sauce. Even with a chicken and microwavable rice, this Thai-inspired dish had brought the heat to this yummy dish. No leftovers. Crockpot Ham and Cheese Bake--A. This recipe was such an easy dish to put together in the crockpot with cubed ham, Velveeta, condensed milk, and macaroni. The store-bought cubed ham made it so much easier than cutting my own if I had any on hand. It was delicious in every bite. Leftovers were equally good. Creamy Bay Scallop Spaghetti: A+. Another delicious pasta dish featuring seafood. This has a bit more heat than in #3 with the jalapeno and the lime juice. But the creamy sauce made all the difference and was delicious in this meal. No leftovers. One Pan Green Chicken and Rice–A+. This was a scrumptious and not so spicy easy chicken dish with avocado (I didn’t have any with me), cilantro, and lime juice. Even with leftover rice, I had enough for one helping for this meal. But it tasted so good. No leftovers. Maple Mustard Salmon-A+. A very simple easy seafood dish to make with maple syrup and mustard for the sauce to coat the fish. Flavorful and perfect to pair with any dish too. It’s ready to be served in less than a half-hour to put on your table. No leftovers. Cookies N Cream Pop Tart Dump Cake-A+. Once again, I look these pop tart dump cakes to make for dessert into the crockpot. It’s so good and filling to cook for two hours. I loved the cookie crumbles and the marshmallow creme to sprinkle over the pop tarts. And yes, I still have leftovers. I’ll be having some for dessert tonight. That’s about it for my belated recipe report card for February. All of them were winners in my books. The recipe links are down below for you to try it and enjoy. I’ll check in tomorrow after volunteering tomorrow afternoon and post a 2-week update for work and my March recipe list on Saturday evening after I volunteer at the zoo. See you around this weekend.
