Today's cooking project

It is Saturday and I have nothing going on so I'm going to make a meatloaf. It isn't just any meatloaf, though. It is a stuffed meatloaf recipe from Mario Batali. The meat mixture is wrapped around cooked baby spinach, carrots, proscuitto, and a soft cheese. You actually coat the outside with breadcrumbs which creates a nice little crust. I've made it a couple of times before and I just love it. It is definitely a project though. You don't bang this out on a Wednesday night after work. The link is to a very similar recipe. I'm using the one from his Molto Italiano cookbook. It calls for ground beef and ground pork (I'm using all ground beef) and proscuitto rather than mortadella. I'm using fresh mozzarella as the cheese inside. Dinner tonight is going to be delish!

The meatloaf sounds amazing! I'm a huge meatloaf fan, and I have rarely ever found a meatloaf recipe I haven't liked. Hope you enjoy!

Nothing so fancy as that here. Not sure what to eat today. I am rather sick of having to eat at all, but have fun making that. Sounds delicious. Course Italiano rules.
