Hamburgers and Fried Summer Squash for Supper

We bought two summer squash this week and I almost let one of them spoil. So, I decided to fry them up for a side dish with our grilled hamburgers for dinner.
Of course, we also had sliced pickles, lettuce and tomato slices on our burgers. I'd say we had a good supply of vegetables with our evening meal, it tasted very good!
Anyway, this was what we had for supper today.

It's probably not as healthy fried in butter, that's how we enjoy it most:)

@AmbiePam For most meals, we use olive oil and once in a while, I splurge with butter instead.

Jay and I shared dessert, watching the CBS news. Then, he watched the basket-ball game. I did a bit of reading, then fell asleep soon after.

Thanks, Anna:) I can't use flour with gluten for breading. So, I bought some oat flour and it worked good.

I never tried frying summer squash but it sounds good. I may give it a try. Fried zuchinni is good.

Those squash look really delicious, I am down to some more chicken and I sure hope my SS arrives soon so I can order groceries,

@kobesbuddy That's similar to what I do. I slice them, roll them in corn meal, then fry in canola oil.

I just breaded them a tiny bit in gluten-free oat flour and salt. Then, fried the squash in butter, which we both loved.
