Amaranthus

Amaranthus is a leafy vegetable full of iron and fiber. It comes in red and green. Just got 3 bundles of it and I will be cooking it for lunch today. It needs to be thoroughly washed and finely minced. I put some oil, sliced onion, sliced green chilies and cook it in little water adding a bid of salt and sugar. A good amount of scraped coconut makes it taste nice. Those 3 bundles will reduce to just a handful almost as leafy vegetables shrunk while they are being cooked. How do you cook amaranthus?

I've grown amaranth as a flower but have never eaten it.

Amaranthus comes in many varieties and yes there are amaranthus flowers as well

I had never heard of this one. But I'll take it. Yeah, I hate that when you have tons of bunches, like spinach and it boils down to a mouse portion.

OI had bought two bundles the last time I cooked and I saw how little it became after it was cooked. And so this time I have 3 of them (lol)

Probably it is native to where I live. It is easy to grow. I am waiting for the rains to subside and will starting growing it

We call it kulitis locally and they just grow wild alongside the weeds. Some of our farmers propagate it and apply organic fertilizers.. It's good for digestion.
